Banana Cocos Pancakes, Banaan Kokos Pannekoekjes
Okay guys. This is góód! These very easy to make pancakes (and quick too!) will guarantee success. And a very yummy, breakfast or perhaps Sunday brunch? Read on for instructions!

So, for roughly 11 pancakes you need:

  • 3 ripe bananas
  • 6 eggs
  • 50 grams of grated coconut (and a bit extra to sprinkle on top)
  • 150 grams of blueberries (also a bit extra to decorate it) (Don't like blueberries? Strawberries would work too!)
  • a bit of coconut oil to bake
  • Optional: cinnamon and maple syrup 

Steps

  1. Mash the bananas with a fork. Beat in the eggs and coconut. Add the blueberries, but save a few!
  2. Preheat the coconut oil on medium heat in a anti-stick fry pan. Use 2 or 3 tablespoons per pancake. You can bake a few at the same time. Carefully flip the pancakes when the top isn't fluid any more and the underside is golden brown. It takes about 2 minutes.
  3. Bake it for roughly 1 minute on the other side.
  4. Final step: stack, decorate and sprinkle!
